Hand made Slow
Braised Beef Tortelloni

Our Braised Beef Tortelloni recipe has been carefully crafted by our Nomma chefs. Starting with a flavoursome soffritto, cooked down until soft and starting to caramelise, we add quality cuts of beef, red wine, garlic, and aromatics including rosemary, thyme and bay leaf and slow-cook until tender. The secret to our rich and flavourful filling? A final addition of parmigiano reggiano. Our fresh egg pasta is rolled out until thin and pliable, filled with our sumptuous filling and then masterfully folded by hand into the classic Tortelloni shape.
